What am I doing here?

I am a stay at home mom who is very concerned with the health of my family. I am always on the look out for healthy but tasteful dishes. Last month I attended a cooking class from the Cancer Project. I loved the new ideas and have been trying to implement the things I learned in my every day cooking.

I recently purchased some nifty new items for my kitchen, and I am so excited about them I decided to blog about my experiences and experiments.

My new SaladMaster waterless cookware came with a good size cookbook and I thought it would be fun to make a goal to try everything in the cookbook (my husband won't support me in trying the seafood). This cookware is completely different from anything else I have ever used, and I want to share this expirence with everyone so they can learn from my awesome mistakes and incredible triumphs!

My wonderful husband recently gave me the greatest gift ever, a Blendtec blender. It has a counter on it and I have already used it 30 times in one week. This device nicely compliments the cookware, and I will keep everyone apprised of my adventures with it as well.

Skillet Lasagna

Place half the spagetti sauce on the bottom of skillet. Place uncooked noodles followed by roccota, browned seasoned meat, and veggies. Use other half of sauce and repeat layering process. Sprinkle cheese on top.

350 til click then 180 for 20-30 minutes were the instructions. Mine needed to cook for over 45 mintes. I think next time I will pre-cook the noodles for 5 mintues simply to speed up the cooking time.

Vacationing with Saladmaster Skillet

We have a time-share condo. We love going on vacation with the amenities of home that a condo provides. It always seems like the kitchen, specifically the pans, are always horrible. I couldn't bare to leave my Saladmaster pans home. So, I took my skillet on vacation with us. It was amazing. We plugged it in and cooked our eggs in the morning and our meals at night. We made skillet lasagna. It was so nice to have the ease and convenience of only needing one pan for so many things.

The Teenager's Perspective.

So, this would be the almost 15 year old (there are 8 days left until my birthday. I refuse to say 14 at this point) who had her first experience with the new toys my mom bought today. I love to make homemade Mac & Cheese (it's way better than the box stuff) and I was kind of forced to use the new kitchen stuff today since my mom got rid of the rest of our pans. It was scary! Just kidding! My mom told me to try making my sauce in the fancy new blender. That didn't go so well... It really does have a setting for sauces believe it or not (there is nothing this blender can't do) but I ended up with froth.... Meanwhile the noodles cooked so fast! It was fantastic! I bake it before we eat it and I was so excited that I only had to dirty one pan! It was great! I will admidt my favorite thing was shredding the chesse with the new Magical Cone Of Slicing (I'm being informed it's called a salad master, but I personly like this name better). It ended up shredding the whole rest of the block which resulted in a very big bowl of shreded cheese. =) It was very entertaining and I didn't want to do my homework. So I baked the Mac & Cheese in our suprisingly normal oven (I'm taking bets on how long until we get a new fridge, oven, and microwave) and when I started to serve it, it was very watery (well more milky since there is no water in it). I figured this was because I didn't cook the sauce in a pan so none of the milk evaporated off. So now you know that my mom isn't lying about the great quality of her toys. =)

Steak and Mashed Potatoes in 30 Minutes

Tonight was one of those crazy nights when every second is scheduled. We got home from parent teacher conference and I had 40 minutes before we had to leave to go to church. Thank goodness I had a plan. I had bought steaks this morning. As soon as I walked in the door I used the No. 3 FF cone to cut Yukon Gold potatoes. I rinsed them, put them in the inset, added an inch of water to the 3 Quart sauce pan, placed the inset into the sauce pan, covered and turned it to medium-click low 15 minutes.

Next, I got the steaks out and put a little grilling seasoning on them. I followed the directions on page 6-2 & 6-3 for pan broiling meat. After the skillet was at 375 I put the steaks on and set the timer for 5 minutes. After 5 minutes I turned down the skillet to 275 and cooked them for 5 minutes more. I partially had them covered while they cooked.

They were very tasty but they were a tiny bit over done. I should have turned it down as soon as I put the steaks on. No one even got any steak sauce out.

While they cooked I made a salad. By the time we got everything on the table, everyone to the table and our prayer said the potatoes were ready to mash. I dumped out the water from the sauce pan and put the potatoes into the pan. I added some seasoning salt and mashed them.

New Pan Salmon

When Jason delivered my new cookware he cooked the best pesto salmon. On Friday I decided to cook it again. I haven't seen a recipe for it in the cook book so I thought I would post it here.

Line the bottom of the skillet with fresh spinach. Place the salmon on the spinach. Spread pesto sauce on top of the salmon. Rinse and put grape tomatoes around the salmon. I cut zucchini with the crinkle cut cone and put it over everything. I probably used 2 cups of zucchini or more. Then place the lid on the skillet. Turn it to 350 until it clicks and then turn it down to 180 for 20 minutes. I am telling you, this is the best tasting salmon ever! My salmon was frozen so I had to cook one of the pieces for a few minutes longer.

Crisp Herbal Tea

I have several things to blog about, but I only have time for a quick post. I can not describe the clean crisp taste of herbal tea when you heat your water in Saladmaster cookware. It truly is Divine! I found a new flavor of tea from Bigalow, Spiced Apple Cider. I have always loved herbal tea but it has never tasted this good! You really have to try it. Heat your water in the smallest piece of cookware. I have been filling it all the way up and then steeping my tea for 10 minutes right in the pan. Then I have enough for two or three cups. It is a new fall favorite!

Perfect Peach Jam

I used my Blentec to mash my peaches. I used the small skillet to heat my organic cane sugar and my Sure-gel pectin. After it came to a boil I poured it into the Blentec and used the pulse button a couple times. I poured the jam into containers where they will sit for the next 24 hours. Hopefully, they will set up! I put some on Dave's Killer Bread for my husband and he said it was fabulous!
